HOT INDIAN CHICK SOUP – KOZHI RASAM

Kozhi means chicken. So, chicken rasam is a very spicy Indian soup. The pepper corns and green chillies add a beautiful flavour to the dish. My grandmother used to prepare this during rainy season by using chicken’s internal organs and bones. It is great for digestion and relieves you of cold. The soup is completely healthy as no extra oil will be used because the fat from chicken is enough. Today the same recipe will be recreated using clay-pot. So, let’s look at the steps.

1.Firstly, prepare black pepper, cumin seed, fennel seed and coriander seed

2. Secondly, crush it and make powder

3. Then, pound garlic with skin and little bit of ginger.

4. Add Oil, 2 cinnamon, 4-star anise, 4 cardamoms followed by the Black pepper, Cumin seed, Fennel seed and corriander seed pounded mixture. Add the Ginger and Garlic pounded mixture together with curry leaves and dried chillies

5. Sauté all together in a slow fire.

6. Add 2 small tomatoes for the flavour and mix well.

 7. Add sufficient amount of turmeric powder, chilli powder and salt to taste.

8. Now is the time to add chicken pieces with 1 cup of water.

9. Add some coriander leaves and let it boil for 20 minutes.

10. Hot Indian soup is ready to taste.
