ULUNDHU VADAI

This is a classic dish from Indian culture. It is a dish that you always see during pasar malam or warung makan during breakfast. It is soft to eat and delicious the moment it enter the mouth. At first I thought it is a doughnut when I was a little kid and try it.

Even it is not what am I expected but it is delicious cuisine and the first Indian dish that I ever eat in my life. Thus every time Wednesday arrive, I will go to bazaar to find this cuisine as my main objective and desire.

It is suitable to eat with hot drink the moment it freshly taken out from the fry. It sure a heaven moment for food lover and not to mention it softness is the main attraction to seek. Every taste that comes to the mouth is a delivery and flavor people cannot lightly take upon.

Firstly, wash and soak the urad dal (24 Mantra Organic Urad White Split) for at least 2 hours. Drain the stuff and place it in a food processor. Process all it until dal becomes a fine paste by adding the tablespoon of water if it is needed.

Next, place dal paste into a large bowl together with jalapeno pepper / green chili, ginger, curry leaves, cumin seeds, and salt in it. Mix it well until it combined awhile waiting for the vegetable oil in a deep pan heat.

Don’t forget to wet your hands before place a rounded tablespoon of dal mixture on your palm. Shape into a doughnut shape thus makes a hole in the center with your finger. Gently slide into hot oil before fry turning once until it become golden brown.

 This process should only take about 3 minutes and this is depending on the size of your pan. Remove and drain in paper towels. Repeat until all dal mixture is used up. Serve warm or at room temperature with or without coconut chutney.
