APAM BALIK – SIMPLE AT HOME

Today we going to look another recipe from Kak Suha. She is really talented in food preparation. I suggest her to open a restaurant and see the number of customers increasing day by day. Apam Balik colloquially in English known as turnover pancake. It can be a starter and dessert which is commonly found in roadside stalls. This is similar like English people’s breakfast but this is filled with ground nuts for a good crunchier taste. To add little sting fresh pandan extract has been added to give more local taste.

Ingredients for  the batter
150g plain flour
½ tsp baking soda
½ tsp instant active yeast
2 tbsp sugar
1 egg
50 ml of coconut milk mixed with tap water
100ml of pandan extract

Filling
Roasted ground peanuts
Canned sweet corn

Method
1) In a mixing bowl, combine all the batter ingredients together and whisk till smooth. Leave it covered for 30 mins. 


2) Light grease a non-stick pan over medium Low heat. Carefully pour the batter on to pan and cover to cook.



3) Once you see the surface starts to set, off heat. Sprinkle the ground peanuts and spread sweet corn.


4) Gently fold the batter and slice. Serve while still warm.
